Has anyone done allergy testing as an older teen/adult and found out that they had food allergies? Only symptom is ongoing GI issues slowly worsening over the years, no other common symptoms, no new symptoms.
So far Gastroenterologist hasn't been very helpful. Allergy testing was offered, trying to find out if it's worth it (x good insurance coverage. )

Yes, it's entirely possible.
What tests has the GI done to rule out GI issues?

It's possible, but if money is an issue, you might want to try cutting out commonly problematic foods before springing for testing.
