What’s the reason for no legumes? If it’s digestive then try sprouting lentils

Indian food!! It's the best for vegetarian options. My Indian granny is about 80 ( not sure that's a guess lol) and she's never had any kind of meat, fish or eggs in her life. She's as fit as a fiddle...or sitar! Very Happy I can give you some recipes tomorrow if you like? And for Squishy too I know she loves spicy foods.

Regarding falafel, there are falafel recipes made from quinoa online. I made one a few years ago that everyone loved (sorry I can't recall which one.)
Gulabi- your indian grandma sounds so amazing! What does she eat for protein btw?

Toasted cashews are wonderful in salads, and can make a salad into a whole meal by upping the protein profile.

When making a stir fry, toss in toasted cashews at the last minute. Especially good with snow peas.

Raw cashews, blended with a little vegetable broth until completely smooth, make an excellent thickener for stews. I use it in vegetable curries all the time to make the sauce come together.

A big handful of toasted cashews is about as close to heaven as you can get! Honestly, I'd rather have that than chocolate.

If you have a Costco nearby, get the big container of Kirkland brand. They are super fresh and crisp, and very affordable.
love cashews too!
