Indian food!! It's the best for vegetarian options. My Indian granny is about 80 ( not sure that's a guess lol) and she's never had any kind of meat, fish or eggs in her life. She's as fit as a fiddle...or sitar! I can give you some recipes tomorrow if you like? And for Squishy too I know she loves spicy foods.

Regarding falafel, there are falafel recipes made from quinoa online. I made one a few years ago that everyone loved (sorry I can't recall which one.)
Gulabi- your indian grandma sounds so amazing! What does she eat for protein btw?

veg cutlets are burgers/patties put together from vegetables.
sautee some veggies with onions ( can be blended opt) then add in egg, some type of flour or matzo meal, to hold it together, spices. soup mix opt. Form into patties & fry or bake. You can top with mushroom sauce opt.
