How can I prepare fish to be safe for sushi?

I want to make sushi as a Chanukah activity. The quality doesn't have to be great, but it needs to be safe, and I want to use real fish.

Raw sushi fish has been previously flash frozen to kill any parasites.

Other options are to use the fake crab stuff (cooked), lox and vegetables

I was told if you freeze the salmon first it should be ok. I tried it and am alive to tell the tale.

I know I read somewhere (maybe a food magazine?) that if you freeze regular fresh fish for long enough, it becomes safe for sushi--but I don't remember the amount of time.

We do cooked salmon sushi. I buy regular salmon, I cut it into thin pieces. I cook it, and we use it to make sushi

But sushi grade salmon. Then use kani which is cooked. And fresh avocado. Should be great and not too expensive.

It’s true, but if you don’t have a lot of experience buying fish for sushi you should start with that. Get salmon or tuna that’s sushi grade. It means it’s very fresh and has been frozen.

According to regulations by the EU, Scottish and Norwegian salmon can be considered sushi grade.

I can't remember, are you in Israel or the US?

If you're in Seattle, Uwajamaya has the very best, safest fish around, and you can ask them to use a kosher knife. They are very familiar with the community.

Really, if you're using fresh fish and not frozen, I would ONLY trust a Japanese place that knows what it's doing. It's an art form, and has to be studied for years. The Japanese don't mess around when it comes to food, and food safety.
