I save the farfel for the day and leave it on top of the kugel overnight (my husband doesn’t believe in reheating food on shabbos— but not sure of the actual halacha).
However when we will eat it in the day it has this very weird sweetish smell....and the farfel that’s touching the sides and the bottom of the pan (it’s aluminum) will be mushy and stringy!!! I don’t put sugar in the farfel. I just fry it a little, add salt and white pepper and paprika, and put it in a pan with water and bake.
As a result farfel is wasted and only the top and middle part is eaten up but I’m terrified that it’s going to happen again.
What do I do?!

Put it into a crock pot bag, knot it, and put it into the cholent pot. Leaving it on top overnight is not a safe temperature.
