I’d like to be first in Miami (from like Wednesday till over Shabbos), and then in Orlando (from motzei Shabbos till Tuesday). Any good villas you recommend? Restaurants? Attraction? Never been there, so any information is greatly appreciated.

Your tickets are into Miami and out from Orlando?
It all depends on your interest, but I'm sure there are already threads on it just search keywords Florida, Miami, Orlando.

Yes.
I checked previous threads, but most of them are where people are taking along their kids. I’m going without them.

I don't know. What made you think to go to Orlando on this trip?

Also planning to go to Orlando this winter. I was already there in the past and covered the theme parks. I was wondering about the food there in particular. Are there any breakfast places to eat out? Also OP there’s a show called cirque de soliel which is amazing!
Are there any nice beaches in Orlando that would be appropriate for dh and I?

Has any of you ever stayed at a resort? Is it something I should reconsider as there are so many pools around premises?

Orlando is an hour from the beach.
Without kids, Epcot is probably the best park for you.
Food choices in Orlando are slim, there's a meat place that sells pizza on the side. none of it is delicious, but it's ok. One of the Winn Dixies has kosher items too.
There's a Gluten free bakery in Disney springs.

Miami and surrounding areas has tons of food.

Miami is 4 hours from Orlando

In Orlando you can get a villa with your own pool for a little more than a hotel room. We swam in the morning, and we t to SeaWorld in the afternoon. With a one day pass, you can get in the afternoon before.

If you are a foodie, just know Miami has the best restaurant.
Around Orlando you can also find, but not same experience
