Is it important to go to an open house if we are already considering the school and sent in an application? What are the pros of going and the cons of not going?

It gives you a better feel for the school and the administration to help you get a sense if it's a good fit for your child, much more than you could glean from an interview there. If you discover that it's not for you, you'll have more time to look for alternatives.

It also gives you an opportunity to see the other parents, children and families that potentially could be in the school.

Your child gets to meet potential teachers and classmates, and to see the school itself. The administration can meet you and your kid and start to see you as familiar, and may recognize you when they see your application and at the interview. You can get excited about it, and/or start to notice issues or holes and figure out how you would deal.
