Sugar Cookie dough

Mix together with mixer or knead by hand:

3 eggs
1 cup sugar
3/4 cup oil
2 1/2 tsp vanilla
2 1/2 tsp baking powder
2 Tbsp Orange Juice
4 cups flour. (add more if too sticky, I normally end up using about 4 1/2 cups. When done the dough should be very workable)

Roll and cut with cookie cutters.

This recipe is from Rochelle Rothman, and we have made it often:

3 cups flour
Pinch salt
4 eggs
1 cup sugar
2 tsp. baking powder
3/4 cups oil

Add dry ingredients to eggs and oil. Knead until well blended. Divide into three balls, roll out. Cut into shapes and top with sugar, cinnamon, and/or chocolate chips.

Bake 10 minutes at 350 degrees.

(You may have to add some flour when you roll it out. Also don't let an oil dough sit too long, it separates).

I like to use the kosher by design kids in the kitchen sugar cookie recipe. It’s actually featured on the front cover of the cookbook. It calls for margarine but I substitute with canola oil and it comes out great!
