Dark brown mushrooms like Crimini and Porcini give a very meaty taste. Brown rice, beans, and kasha mixed together are very nice. If you add potatoes, don't leave them in huge chunks. Cut them smaller so it's easier to serve. If you like sweeter cholent, add a diced sweet potato as well. Season it the way you normally would.

There are recipes online about how to make your own vegetarian kishka.

I would make a regular recipe and just omit the meat.

Maybe sauté a lot of onions in a nice amount of oil to make up for it.

You can double this revipe. It feeds 35-40 ppl.

Cholent
1 roaster deep pan 35-40 ppl

5 large potatoes
1 1/2 bag beans
1 bag barley
2 tbsp garlic, paprika, onion pwdr
3 tbsp salt
1/2 tsp pepper
1 1/4 cup ketchup
2 lb meat (leave out)
1 sautéed onion

Cover with water. Cover pan tightly. cook well. Then leave at low temperature till ready to serve.
