I am trying to prep early for Shabbos due to various reasons. Can any of the following be made Wed or is that too early to be good.
1. Pasta Salad
2. Cucumber Salad
3. Yerushalmi Kugel

The kugel and cucumber salad can be made today. I’m not sure about the pasta salad, depends what you put into it. Perhaps you can prepare as well.

Cucumber salad, cole slaw and other such salads are better when made earlier.

You can make all today. The pasta salad make the pasta and dressing separate. Keep each chopped vegetable separate as well. Pasta should be rinsed, tossed with oil, drop drained and then sealed in a Ziploc with all air pressed out and refrigerated.

I would put kugels in freezer if I made stuff on tuesday for shabbos.
You can also make a double recipe of kugel and keep one in freezer for another shabbos.

Pasta salad I would say yes to the pasta and dressing, but put in vegetables later or they'll get soggy.
Noodle based kugel freezes fine; you can make as much in advance as you want. Potato kugel and vegetable kugels I find refrigerate fine but don't freeze as well... They're not bad frozen though. Perfectly edible.
Cucumber salad can be a few days in advance, but not forever. It'll get soggier as time goes on.
