Can raw salmon be frozen? And are there any specific directions for defrosting?
TIA

Rinse well, pat dry. I wrap it in parchment paper and sealed plastic bag. Defrost in fridge or cold water. I always freeze salmon to have extra as needed

I find that you can't freeze salmon for a long time. It gets "fishy" if you do.

It defrosts nicely or gets crumbly?

Freeze in ziplock bags. Defrost before cooking.

I was told by the fish store not to wash the fish before freezing.

Just put it in Ziplock backs and freeze. But salmon tastes better fresh.
