I had two steaks in my freezer since just before Pesach that I totally forgot about. I defrosted them. I have a grill pan. I want simple and nothing that needs to be marinated for more than hour. How should I cook them?

I love to grill plain just with some black paper and garlic powder
You have to do it good or it dries out. High fire. No moving or poking just turning over once.

Preheat pan. Season steak with chili powder, garlic powder, coarse salt.
When you can feel the heat rising above the pan, quickly brush with a drop of oil. Add steaks immediately for a good sizzle. Grill just a few minutes until the color has changed on the sides going up the steak then flip and finish cooking for about 4 min.

I just made this for last shabbos! It was a 2 lb cowboy steak. Drizzle olive oil, soy sauce, and montreal steak spice.
Heat up pan. Pour oil into hot grill pan. Grill steak 3 minutes, then turn 90° and grill another 3 min. Flip and repeat.
Keep in 200° over for about 2 hours.
