Need dietetic veg side dishes for my teen

Hi all. My 15 yo dd is on a diet, she’s seeing Phyllis lifshitz in flatbush. I need to keep her happy and satisfied. Please give me ideas for crowd pleasing veggie ideas. No corn potato sweet potato bnut squash peas. Any low carb veggies, with ways to prepare it that a kid would like. She actually isn’t very picky so interesting ideas welcome too.

Sweet n sour bakes mini peppers, broccoli dipped in crumbs, fried cauliflower, roasted sugar snaps,...

I sauté Diced onion and carrots in Pam until soft. Add cubed zucchini. Add can tomato paste salt and pepper.
Toss cabbage with Pam or drop of oil. Add spices and roast on cookie sheet
Cook beets in water. When ready skin will slide off. Dice. They are delicious fresh and hot.
Roasted carrots are also delicious. Slice sprinkle with whatever spices you’re in mood of. Spray with Pam and bake at 400
Roasted cauliflower
You can mix roasted cooked cauliflower with a drop of potatoes to make mock mashed potatoes.

Roasted veggies.

Cut up any combination of:
Peppers
Zucchini
Tomatoes
Mushrooms
Yellow squash
Purple or regular onion slices

Spread veggies on a cookie sheet.
Spray with Pam. Sprinkle salt. Sometimes I put Montreal steak spice, or zaatar, or garlic and onion powder.
Bake 450 for 20 minutes.

Riced cauliflower with sautéed mushrooms.

Spray whole or halved brussels sprouts with olive oil, and roast until caramelized. They become sweet and nutty. You can add onions if you'd like.

Roast asparagus with a spray of olive oil, salt and garlic.

Roast beets, turnips, onions, carrots, peppers, any kind of squash with a low fat italian dressing.

Roast carrots with olive oil and salt.

Ratatouille.

Green beans with soy sauce, a drop of sesame oil and sesame seeds

Roasted veggies - zucchini, carrots, colored peppers, red onion sliced. Salt and pepper and pan if you want. Brook or bake.
I like putting it on sheet pan with chicken breast and broiling together for supper.

Spaghetti squash kugel - light in everything and free on many plans

Cauliflower rice - I just bake wit salt, garlic Pwdr and lemon juice

Zara’s cauliflower. - sprinkle frozen cauliflower with zatar and bake. Spray with pam

Garlicky broccoli - frozen broccoli with salt and garlic. Spray with pan.

Cook chicken with stir fry vegetable mix

Beet, parsnip, carrot fries. Cut into fry shapes and bake. Salt + pepper (I love roasted beets)

Garlicky turnip fries - cut turnip into fries. Sprinkle with salt and lots of garlic. Pam. Bake

Grilled eggplant slices

** I put Montreal steak spice on almost everything. It gives a great flavor.

(Green beans and sugar snap peas are yum but are considered starchy in many plans so not including in list)

Vegetables stir fry with garlic and soy sauce
(Zuchinnis, any color peppers, onions, fresh mushrooms, broccoli, baby corn,celery....) basically any combination of what she likes (or whatever you have in the house!!Wink )
