Anyone have good keto latke recipes to share?

I get through yomim tovim better when I have good substitutes prepared.

I'm not keto but I would mash a few different types of cooked squash with some eggs and spices and fry those up. Yum. If you have some kind of crumbs you can use, add them in. Otherwise just drop tablespoons of the mixture into a frying pan with hot oil.

I've seen recipes for zucchini and cauliflower latkes. I want recommendations that people have tried and were good.

I also eat moderate amounts of carrots and beets even though they're not strictly keto.

If you're able to eat any sturdy root vegetables, like kohlarabi, carrots or parsley root, which are less carby - those come out good as latkes.
Follow this recipe. Just replace with a 4 cups of a root vegetable you can eat.

Something like zucchini or cauliflower - you'll need a different recipe for.

If you make with cauliflower, cook and squeeze out the cauliflower before adding to the batter. Otherwise it does not cook properly. Sorry, no recipes. We tried one year and it was so disappointing ( after 4/5 tries) that we just didn’t bother again.
