I'm no expert but it probably won't have flavor. I throw out fresh herbs when I can't smell them anymore (and I choose them by smelling)

Thanks. Just wondering why its so different to dried parsley spice...?
Perhaps I would take the risk and use it if I know its not bad. Dont want any stomach-aches..

The method of preserving it. I mean if you leave an apple out overnight it also shrivels but that's not called apple chips.
I doubt it would be bad just tasteless. You can try it yourself and see what it tastes like.

FWIW, dried parsley that is sold is pretty tasteless.

If you're using it for color in the falafel then it's totally fine.

You go, girl. Whatever you don’t use, either tie in a bunch and hang upside down to dry completely, or chop up and freeze. Next time, dry it or freeze it as soon as you see you won’t use it up right away.
