When a recipe calls for Skirt Steak, can I substitute it for Sandwich Steak?
Whats the difference between the two?
I am a bit clueless when it comes to meats...

Skirt steak is used for its flavor and because I stays tender and juicy, with some chewyness.
Sandwich steak is dry, lean without marbling, and doesn't compare, but can be very good when prepared well and served up in a sandwich with caramelized onions and lots of toppings.
