For those who bake mezonos bread/rolls/pizza, what do you use instead of water?

Apple juice not from concentrate
In pizza, you could use milk. Never tried it though.

Milk or grape juice. Milk works fine but obviously is milchig. Grape juice can make things a bit dense or sticky and has the problem that it's sweet, so it doesn't make good savory things.

Apple juice is the lightest and won't really change the dough.

If you use milk in regular bread/rolls, you need to make a siman that it's milchig (as per my rav but I believe it's across the board)
