Tweety1, that sounds so cool. Do you defrost first? How thick the slices? And how long to fry? I'm imagining the taste and I just can't. But schnitzel is incredible, and so are fish patties, and gefilte fish is basically ground fish with crumbs and egg etc, so I guess why not? I'd like to try that one day!

For the slices defrost just a bit so it's not rock hard otherwise you can't slice it. Not thick. On the thinner side. Fry on a medium/low-medium flame untill it gets a nice color.

Thanks for all your ideas!

I adapted this recipe from the What's Cooking cookbook:

1/2 cup cottage cheese
2 eggs
1/2 cup whole wheat flour
1/4 cup maple syrup
pinch of salt
2 Tbsp milk

I actually quadrupled(!) this recipe tonight and there are maybe 2 left lol.

I ended up making tuna patties alongside, some with corn and some without, though the latkes are almost gone and the patties are still in the oven. Oops.

I gotta tell you, half an hour after reading this post I was busy in the kitchen cooking up a batch for breakfast. They're delicious! Thank you!

Thank you! Does the cottage cheese keep its texture? One of my kids won't touch it if it does....sounds great to me, though!

I would try it with ricotta, smoother texture, better flavor imo

I blend my cottage cheese pancake batter. Otherwise use whipped cottage cheese.

Serve it with simple pasta (not too savory) and a fruity leafy salad.
