My potato latkes came out excellent this Chanukah, but when I tried to make varieties such as cauliflower or other vegetables, let's just say not so much. Have you done well with latkes made of something other than potato?

You need a sturdy vegetable like butternut squash or kohlrabi.
Zucchini and cauliflower are full of water.

There was a recipe in mishpacha for cabbage latkes. I didn't try them out though so I don't know if they're good.

I'd love the recipe for cabbage latkes!
My family often has four or five kinds of latkes every year at our annual latka party, but my favorite by far is carrot ginger. Very ready, since the carrots don't release a lot of water like other vegetables. Best with freshly grated ginger. Use as much or as little as you like

I don't have the recipe with me right now, but one nice alternative that I have done sometimes in the past is make latkes out of green apples. (It's sort of like latkes and applesauce in one.) It's from the cookbook "Persian Food from the Non Persian Bride."

Otherwise, potato is my most successful.

I know it's late for this but can I just say that I made the sheet pan potato latke from kosher.com in the oven and they came out amazing much better than my fried ones. disclaimer: I am not good at making crispy fried latkes. but they were so good. you can see it online Latkes 3 way, the basic idea is: m ake your usual latke batter about 6-8 potatoes, heat half a cup of oil in the oven for 5-10 minutes, I did it for 3-4 b/c was nervous about burning and once hot pour in batter. bake until crispy brown all over. came out very oily and yum, can try adding a bit less oil if you want.

I made butternut squash latkes they weren't that good at all.

can I put the butternut squash in the oven to soften? I find it extremely hard to cut...

They might be mushy.
Any way you can buy it precut if it's hard for you and then shred it in the food processor?
