Yummy stuffing or kugel:

Saute diced onion. Optional: add diced celery.
Remove crust.
Tear challah into bite size pieces.
Sorinkle water on challah and squeeze into a dough.
Add an egg.
Add the onion and celery.
Add dried parsley and a little black pepper.

This is delicious stuffed under chicken skin!

Or can be baked as a kugel.

Pulse in a food processor to make bread crumbs. Store in the freezer.
I sometimes make croutons:
Cut challah into small squares. Pour olive oil, salt, frozen garlic cubes and parsley flakes onto the bread.

Bake open on high heat.

This is an apple challah kugel:

Remove crust.
Tear challah into bite sized pieces.
Sprinkle with water.
Add an egg.
Add sugar and vanilla (amount depends on how much challah)
Add thinly sliced apple.

Put in a pan and sprinkle with cinnamon and bake.

Yum!

Take off the crust, make it wet, squeeze out the water. Add eggs, milk or water, salt, and sugar. Blend. Fry in latkes. I don't have exact measurements.

In addition to the ideas above: soak, squeeze out and add to chopped meat for hamburgers or meatballs. Or make parve kishke.
