Prepare enough sh”sh for 15 extra people. Get extra dessert items. Buy pretty papergoods. Give everyone a time to come.
Shoin. You made a Shabbos Kallah...now if only the wedding was that easy 😆

Have friends make salads, desserts.. make a big buffet table and get nice paper goods and rolls
Give a time it's called for, people will show up, eat, shmuz, girls will sing, etc.
If a friend wants to organize a game they can, but not necessary.
That's it, nothing so major! And see what you can have her friends take care of, less on you.

What is recommended food that the girls will like? Are the father and brothers supposed to be out of the house?

Probably better if males are gone. Girls often sing together, and would be uncomfortable for brothers anyways. They're not going to aufruf?
The choson will probably send a nice bouquet (as you'll probably send nice platter for aufruf if they make one).
Girls like regular food. Ask your daughter what they'd like. Challah, dips, lox, salad, nosh, rugelach... Standard shalosh seudos food. There's usually 10-15 girls, not a huge crowd.
It's generally a pretty low key no pressure event. You're making a wedding and shabbos sheva brachos a few days afterwards... Life is busy enough as it is. The shabbos kallah generally isn't a big deal. I wouldn't recommend making it into one.
