Make a basic cake batter (I like spice cake.)
Add as much as you want of these, until you get a nice thick cookie texture:
Flax meal
Wheat germ
Quick oats
Chopped nuts
Dried fruits
Protein powder
Vitamin and mineral powder
Essential aminos
Shredded carrots or zucchini
or anything else healthy that you want to sneak into your kids.
Bake like regular cookies, until just golden and firm, yet soft inside. You don't want them dry and crunchy.
I promise you, the pickiest eater will love these. Who doesn't love cookies for breakfast? I make a big batch, and they last all week. This way even if your kids are late for the bus, they can have something healthy in their hands. Bonus, they don't crumble like muffins.
I call them "Busy Mama Breakfast Cookies". If your DH tries to eat them all, you may have to make a double batch.

Easiest breakfast is something like post banana nut cereal and oat milk. For a little more cooking I do like a chickpea fry. I personally generally like savory foods so would love pinto and black beans for breakfast.
