Balsamic Marinated Flounder:
This recipe works for most thin white fish. I have used it for Talapia and flounder.
From the bais Yaakov cookbook. (double as you need- will work for 10 pieces).

4 (6 0z) flounder Fillets
2 Tbs Olive Oil
2 Tbs Red Wine
2 Tbs Soy Sauce
1 Tbs Balsamic Vinegar
2 Cloves Garlic, minced
1/2 tsp dried oregano.

Make marinade in a gallon size ziplock bag. Stick fish into bag (while frozen or not).
Let it marinate, minimum 30 min in fridge (or on counter if fish is defrosting).
Dump all fish and marinade into baking pan (not oiled) and cook on 350 for about 20 min.

This has quick active prep time, easy to do in advance, and super delicious.

Mix together (low fat) mayo, ketchup or bbq sauce, and spices, coat fish, and dip in corn flake crumbs. Bake or fry.
