I happen to have a lighter than usual work schedule over the next two weeks. I have the kitchen facilities and freezer space I would need, and I'm wondering if it's too soon (8 weeks) to make Pesach soups and desserts. I suspect it's fine as long as I wrap everything well, but wanted to get some other opinions.

I mean I've seen comments saying they served sukkos food the following Chanukah so I think you'll be ok..

If it is properly wrapped and frozen immediately it is fine. I like to put the trays into freezer ziplock bags to prevent freezer burn. I label each item and then put a list on the door of the freezer of exactly what item is in each precise location. Helps tremendously when planning meals.

I'd be comfortable preparing proteins and freezing raw. Honestly probably most things besides roasted veggies or potatoes.

I’m having a hard time imagining koshering for Passover this far in advance
Oh- and we rarely have actual chametz other than actual matzah in our house. How would you even think if doing it if you do?

You're getting me nervous, I just cooked and froze most of my pesach food (due IYH right before pesach, no family around - never did this before!) I cleaned and froze raw chicken, made meat, kugels, cakes and cookies. Will it not last?

Funny you say that. I served sukkos food just this past shabbos and it was very much enjoyed.

It absolutely will last pesach is in 7 weeks... most things freeze well for a minimum 3 months!
