Dh only likes fried, oily schnitzel.
Anyone know how to get the same results in the oven?

I spray the bottom of the pan liberally with Pam and after putting the schnitzel on spray the tops of each piece as well. Not super healthy but way better than deep fried and pretty tasty too

I spray parchment paper with cooking spray, then put down the chicken. I spray olive oil from a spray bottle onto each piece of chicken.
I bake it covered for about 20 minutes, then uncovered 10 minutes. Comes out delicious.

I would do it like potato kugel. I read a latke recipe like this and thought it was a genius idea. Grease your pan with oil heat the pan until the oil sizzles and then put the chicken on the hot oil. Drizzle more oil on top of the chicken and bake.

Pour a few tablespoons of oil on a pan and preheat it with the oven. Prepare all the schnitzel before, then place on the pan while it’s boiling hot. You’ll hear a sizzle. Bake on 400 for around 15 minutes and then flip the schnitzel until it’s as done as you like it.

I've made oven fried chicken like this. It was so delish and nice and moist and oily and crispy

Use mayonnaise instead of egg for the breading. (In addition to the above ideas)

I have an air fryer. The outside can get some what crispy but it’s not super moist inside as is the case when deep fried.
