My in-laws, whom I respect dearly, are coming for Pesach. My FIL is a vegetarian (no meat, chicken, fish) (eggs yes), and my MIL is gluten, sugar, and many spice free....

Yes to G'bruckts

I can't begin to think of what to make...

Open to all suggestions, thoughts, or advice.

(If possible, please include recipes)

I make a lot of tortilla espanola. Its an egg and potato omelet that you make in a frying pan. https://www.bonappetit.com/rec.....anola I like it with fresh lemon squeezed over it. It adds a nice contrast in taste.

If you eat quinoa you can make all sorts of salads, stuffed vegetables, side dishes with it.

May I add to the q?
My toddler & I cant have gluten sugar or white potatoes either -what can I give her?(&me)for a snack/cake/nosh??
Baby might get heter for kitniyus if have any recipe ?(she’s very bored of quinoa by now & doesn’t look @ it)

I have a friend whose sh can’t eat gluten. She makes tons of blintz leaves and fills with diff veggie fillings throughout yom tov.

Trying to figure out what to make for FIL.... I feel more limited with his dietary needs.

He doesn't eat steamed, sauteed veggies.

OP, you might ask your MIL and FIL what they have eaten in past years on Pesach. It's possible your best bet will be to cook some meat or fish and some stuff with matza meal, like a matza kugel, or Pesach rolls. So, Jack Sprat won't have any animal or fish, and his wife won't have any gluten or sugar. They can both take what they like, and let others eat what they don't.

But here are some main course ideas that may work for everyone. (I'm assuming you are not restricted like those who only eat produce with a thick rind or shell.)

Vegetable soups (I like zucchini/potato with fresh herbs, also squash soup or minnestrone without pasta)
Veggie stir fry (our favorite is broccoli with carrots and shitake, sometimes cashews. Kale and red cabbage is also good.)
Salads
Any cooked or raw veggies -- asparagus, zucchini, spinach, beets.
Egg dishes -- frittata or omelette

IMNSHO, ask them what they usually eat on Pesach.

For a gluten-free non-vegetarian, I'd make lots of basic meals. Grilled chicken with roasted vegetables. Grilled salmon with a salad. That kind of thing. We're not gluten free, and its what we do. If she eats potatoes, they make potato crackers, I forget the name, that aren't bad. They also sell excellent gluten free crumbs at Pesach. In a lot of ways, Pesach is a gluten-free dream come true.

Vegetarian is a lot more difficult. Does he do milk? You can do a lot of soups for him -- potato leek, vegetable, things like that. And eggs.

Sauteed zucchini with eggs. spinach with eggs/cheese. sauteed sweet carrots with pineapple, Layered eggs & potatoes with oil or sour cream/can add cheese. baked potato stuffed with broccolli & cheese. Letcho can add eggs or cheese. vegetable quiche/kugels/patties. You can add potato starch or cooked potatoes as binders.
carrot salad. beet salad. cucumber salad. potato salad. avocado/egg salad. mushroom egg salad. eggplant slices coated with nuts. mock liver made with eggplant, eggs, nuts.
sauteed zucchini with carrots. Baked sweet potato/fries/potato & sweet potato discs sauteed with onions & spices.
carrot strip chips roast on 500 for half hr, sweet or spicy version. Spaghetti squash kugel.

So many options:
Beet chips
French fries, eggs and hash browns
Omelettes with veggies
shakshuka
vegetarian liver-can be made out of zucchini and eggs, or ground nuts.
Serve with lettuce or in blintzes.
Mixed Vegetable patties, zucchini patties
salads-spaghetti squash salad, romaine with pears, apples, beets...
Layered potatoes and eggs with shredded cheese
Matzoh with grilled cheese
Matzoh brie-(matzoh with eggs)
Kugels-butternut squash, potato, zucchini, vegetable
