3 layer vegetable kugel

I was at someones house for shabbos and she made a vegetable kugel with 3 layers. I think it was broccoli carrot and califlower. Does anyone have this recipe?

I sautee a ton of onions and mix the onions, onion soup mix, eggs, mayonaisse, salt and pepper, baking powder, and flour into each layer.

Pour whatever layer you want into the pan, and put it into the oven at 350 until the layer sets. Repeat with the rest of the layers.

That recipe is in the Kosher Pallete- I would def add a sauteed onion and onion soup mix as well though because the few times I have had this by other ppl it kinda falls short in the flavor department- although it sure does look pretty!

it looks and freeze nicely, but it's a lot of work. I usually make just one layer and serve it like that.

Vegetable Kugel, Layered III (P, KLP)
Source: "More Than Grandma's Kugel: Cooks Can't Seem to Resist Giving the Traditional Jewish Side Dish Their Own Twist," by Marilynn Marter of the PHILADELPHIA INQUIRER
Serves: 20
Broccoli Layer:
1 pound broccoli, fresh blanched or frozen, chopped fine
1 cup eggs or egg substitute
1/2 cup matzo meal
1-1/2 tsp. garlic powder
1 tsp. salt
1/2 tsp. white pepper

Carrot Layer:
1/2 cup oil or equivalent margarine
1 cup brown sugar
1 large egg
1-1/2 cups matzo cake meal
1 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
2 cups carrots, shredded
1/4 cup orange juice
1/4 cup lemon juice

Cauliflower Layer:
1/4 cup oil
1/2 cup onion, sliced
1-1/2 cups mushrooms
1 pound cauliflower, fresh blanched or frozen, chopped fine
1 cup eggs or egg substitute
1 cup matzo meal
1 tsp. salt
1/2 tsp. white pepper

Prepare 9"X3" baking dish by rubbing with olive oil or non-dairy margarine.

Make Broccoli Layer:
Combine broccoli, eggs, matzo meal, garlic, salt and pepper. Spread in even layer in baking pan.

Make Carrot Layer:
Cream together oil, brown sugar, and egg.

In a separate bowl, combine cake meal, baking powder, salt and cinnamon; add to oil mixture. Blend in carrots, orange and lemon juice.

Spread over broccoli layer in pan, taking care not to mix vegetables.

Make Cauliflower Layer and Assembly:
Heat oil onions over low heat 20 to 25 minutes until translucent and golden brown. In a separate pan, sauté mushrooms. Let cool.

In a large mixing bowl, combine cauliflower, eggs, matzo meal, salt and pepper. Add sautéed vegetables.

Spread over carrot layer, taking care not to mix vegetables.

Bake at 350°F for one hour or until a tester inserted in center comes out dry.

Poster's Notes:
I haven't tried this, but it sounds very good. I am adding it to my Passover menu for this year.

Vegetable Kugel, Tricolor (P, KLP, TNT)
Source: "Mavens in the Kitchen," Vaad HaKashrus of Tidewater
Serves: 12 or more (2 loaves)
1 (12 oz.) package frozen cauliflower
1 (12 oz.) package frozen broccoli
1 (12 oz.) package frozen carrots
9 eggs (the original poster said that she used 6, so I did as well)
4-1/2 tablespoons onion soup mix
1-1/2 cups mayonnaise

Cook the cauliflower (I used microwave). Mash. Mix with one third of the eggs, mayonnaise, and soup mix powder.

Pour half into the bottom of each loaf pan (I lined with parchment paper) and bake for 20 minutes in a 350°F oven.

Follow the same directions for the carrots, pouring over the cauliflower and baking for an additional 20 minutes.

Do the same with the broccoli.

Remove from pan once cooled and slice into beautiful, tri-colored slices.
