My mil asked me to prepare a veggie side dish dor day meal. Not a salad. Anyone have something good and easy and a crowd pleaser? I prefer w freahq veggies vs frozen bags
Pls share recipe.

Eggplant slices drizzled with techina and silan. Roasted cauliflower, roasted butternut squash with salt, sugar, and cardamom sprinkled on top, Mexican style fresh roasted corn with lots of lime and chilli on top, breaded cauliflower in a sweet and sour sauce, stuffed jalapenos with chopped onions, diced peppers and mashed chickpeas, or jalapenos stuffed with refried beans in a green chilli sauce, we love veggies in this house.

Sauteed green beans with Lots of garlic and a little salt
Green beans wrapped in pastrami
Cauliflower roasted with shwarma seasoning
Grilled zucchini in thin slabs- knife or use a peeler
Roasted vegetables I like to use wegmans basting oil
Grilled white asparagus with carrots
Skewers - tomatoes, zucchini, onions, peppers
