How would you make it? I used to buy frozen strawberries in syrup . It has not been available for a while.
Plain frozen strawberries are not sweet enough.
How could I capture the taste of frozen strawberries in sugar/syrup?

I do my ambrosia with whip, fresh strawberries and fresh or canned pineapple. Just blend till it's the consistency you like.

AMBROSIA:
2 non-dairy ready-to-whip liquid topping ( I do one)
1 (4-ounce) can mandarin oranges, drained
1 (12-ounce) container frozen strawberries in sauce, thawed
1 (15-ounce) can pineapple tidbits, drained
1 (15-ounce) can sliced mango, drained, cut into bite-sized pieces
1 (15-ounce) can sliced peaches, drained, cut into bite-sized pieces
PREPARATION
Place topping, oranges, strawberries and sauce, pineapple, mango and peaches in a large glass bowl. Stir gently
Chill in refrigerator for 2 hours.

Where do you get frozen strawberries in syrup?? I know how to make ambrosia... my question was how to make it without the strawberries in syrup?? They don’t sell it anymore with a good hechsher. It’s been off the market for quite a while.

I dont make it with syrup and its totally fine!

Maybe use the syrup from the canned fruit instead of draining them all?
(No personal experience, I have never made this.)

In a small saucepan combine 1/2 cup each sugar and water. Bring to a boil, stirring, until sugar has dissolved. Allow to cool. Add syrup to strawberries.

Put strawberries and sugar in a container. Put in refrigerator overnight. It gets syrupy
