I've seen people use whip topping as icing for cake, but the container of topping itself says to keep refrigerated... am I right for extrapolating that a cake/cupcake frosted with it will need refrigeration? Or that the whippiness will collapse if left at room temp?

I make frosting with whipped topping + instant vanilla pudding. The pudding thickens and stabilizes the whip. I've left cakes frosted with this at room temperature for 2-3 days and it's fine, but I don't think I'd leave it for longer than that.

Yes you need something to thicken it.

You need to add something to the whip. Plain whip will dissolve. I do whip, instant vanilla pudding, a bit cream of tartar.
