Kids are off from school for who knows how long...
Is it safe to pick myself up and fly from NYC to Orlando?
Whats your thinking?
Airfare is dirt cheap!

No. There's a high risk you'll be exposed in the airport or airplane and catch or spread diseases. Have you stopped to consider why the airfare is dirt cheap? Because most people don't like to pay to get a disease that's way worse than the flu. Also not sure what you planned to do in Orlando but are you aware that Disney is closed? You know why?

I wouldn't fly anywhere and I wouldn't want to be away from home because things are going to get worse.

Are you planning to stay in a hotel or motel? You will be exposed to the germs of many different people with no ability to effectively social distance yourself.

Restaurants and other public facilities will be closed so what do you expect to do with your children.

What if you or one of your children become ill away from home. It's much more difficult to access medical care in a strange place.

There’s a good chance you will get sick. Even a mild case is pretty miserable. Why would you want to deal with that away from home.

All fl attractions are closed, I read they are even closing the beaches. So unless you will be in a big private house with a pool, you are probably better off at home. Your kids will be just as bored, even more, because they wont have all their toys, books, and games with them. Not to mention you may be stuck there a considerable amount of time if a lockdown is put in place.

There's a lot of stuff to do that's not Disney. Many families will rent houses with pools and will really be able to have a nice vacation without Disney or other attractions. BUT, lots of buts:
What's your out of state insurance like?
Food. Were you planning to buy there? Who knows what's going on.
Yes, the risk of flying. Possibly even greater, the risk of your flight being canceled. Then what?
