Due to schools giving out tons of baby carrots for lunch I have a plethora of baby carrots. Anyone have easy delicious recipe. I'm talking 20 small bags of 7 carrots. Help!

Carrot soup? Cook carrots with an onion & potato until soft (on the stove or in microwave). purée until smooth. Add water if needed to reach right consistency. Season with salt & pepper to taste. Can add a pinch of sugar if needed. Extras soup freezes beautifully.

Easy carrot soup-
Toss baby carrots and a bag of cauliflower with olive oil, salt and pepper. Roast on 400 until browned and soft.
In the meantime, sauté an onion in a pot. Add roasted veggies, water to cover and spice with black pepper, red pepper flakes and salt (all to taste, I like it peppery). Bring to a boil, simmer for 20 minutes, then blend and eat.
