Something along the lines of "Thinking of you and wishing you well?"
I've also been feeling like "hope you're well" is both a touchy and stale thing to keep saying.

Why not just acknowledge it, something like:
Hi, hope all is well - no longer the trite cliché it used to be...

We’ve done that too within the last week or so!
I ended up just going straight to the point (it’s ok really, because was a continuation of a conversation we started Sunday) but I was getting nervous if Dr is ok bec I heard someone in the team there got sick. Bh I got my answer anyway- she told me she’s at the hospital this week. Now I continue davening she doesn’t get covid19!

I don't see why you think this is a bad thing. Now more than ever, it's not a cliche but a genuine wish, just as the formerly trite "stay well, be well, zei gezunt" are genuine wishes. What do you suggest as an alternative: "Please wash your hands before and after opening this message"?

Lol
No, it’s just that being in touch pretty often I was looking for a change in the opening line. Same meaning, but different wording.
