What I am doing is: gefilte fish, chickensoup, kugel and roasted chicken or beef.
My friend has a real alte welt mother a big tzadeikis she encourages people with a large family to get a big pot, do a lot of veggies in it and chicken and water, so you have veggies and meat and soup in one pot.

Very traditional (for me) but hey what could be simpler?

I have a big pot that I spray with klp Pam type thing, then saute onions (or saute elsewhere and put in pot), chunked potatoes, carrots, chunked onions, mushrooms if you use, put chicken on top, season, pour in water and white wine and let simmer till shulchan aruch. I'm sorry this is so imprecise.
Reheat leftovers the next night.
Save extra gravy for future potatoes.

It's a huge pot that I won't be using this year ;-D I'm sorry I can't tell you more specific directions.
There will probably be lots of liquid left. Save whatever non chicken and veg. there is. After yom tov, skim the fat, and freeze to reuse on potatoes.
This year, better yet, just add to your cholent.

There are recipes for chicken cutlets baked in tomato sauce, enough that I think it should be fine for seder, and reheat on low in the crockpot or simmer on the oven.
Remember that you will and you won't be hungry. (Does that make sense?)

Almost exactly my menu, except we do regular gefilte fish instead of carp, no flanken (no meat at the Seder, only chicken), and no compote, as we're always in a rush to eat the afikomen by chatzos and don't have time for any dessert.
