Why don't you just leave out the exaggerated and gory midrashim and go with the pshat?
If you say, "Pharaoh enslaved the Jews" most kids can understand that. No need to embellish.

My students often use the word booboo when they are hurt. I do use booboo and hurt interchangeably when I teach but booboo is appropriate for many of my students that just turned 3.
I still don’t see how any of what I said changed the story

I soften it for little kids.
But I think there's something else important going on here.
Small children express negative emotions symbolically.
The monster under the bed.
Right now, there's a lot of anxiety in a lot of homes. Young children pick up on this.
Maybe there's something else scary besides Vashti or Paroh going on here.
Try giving them dolls or toys to act out the story, and see what they say and do. Then, you can reassure.

I used to teach kindergarten. My parsha/yom tov lessons were very real. I wanted children to feel it, but I also emphasized a lot on the yeshua, thanking Hashem for the nissim. Dancing & singing in the classroom. This was real as well, they had such excitement when that one little jug of oil was found. My point was that as they are experiencing Chanuka it shouldn't be about the parties, but more on todah. I also kept reminding them that it's not happening now, Pharoah/Achashveirosh/Antiochus are long dead & how much we have to thank Hashem that he saved us & that now we are living with a malchus shel chesed that allows us to practice Judaism.
