Well, both of my grandmothers made tons of Latkes on Pesach.
In fact, one grandmother (she should live to 120) told me that the year they were freed from the camps, she had 100 kilo of potatoes to feed to 5 starving men (her brother, her two cousins, and two uncles). She spent all of Pesach grating (by hand of course) and frying....
To add to MiriFr, I'd say lukshen (crepes) for the soup....roasted beets (or borscht, but I think you are too late to make that right now - and most of your family might not touch it anyway, though my father claims my grandmother's was delicious...), and carrot tzimmes.

potato chremslech. though mine always fall apart when frying.
basically its cooked & mashed potatoes pancakes. you add eggs, salt & potato starch. Fry for best taste. but baked is great too. just add oil into the batter.

Remember to add a good amount of shmaltz 😉
But really some ideas can be: chicken roasted with a lot of onions, potatoes, and wine; brisket in wine; gribenes; and, of course, tzimmes.

The Spice and Spirit Pesach cookbook has nothing but heimish recipes. No fancy patchke, no hard to find ingredients.
I always joke that this cookbook is a lie, because Lubavitch doesn't use any spice on Pesach.
