Do you leave a metal sink strainer under the plastic sink insert, or just the plastic sink insert that already has some holes at the bottom?

Yes. I have 2 strainers per sink for Pesach. One under the strainer that I label "Pesach (chometz)" and one on the strainer labeled "Pesach". It catches what the Pesach strainer missed.

What if the metal strainer underneath middle thing turns to the part where it plugs up instead of draining? I wont be able to take off the insert to change the middle thing so that it drains?
