What's easy?
This is the one I make.
9 eggs separated
1 1/2 cups sugar
Make snow with 1cup sugar. Add yolks and the other 1/2 cup sugar.
Add
1cup potato starch
2 Tbsp coffee (dissolved in a little hot water)
Pour into 9x13. Bake on 350 for an hour.
Optional drizzle with chocolate.
It falls like every pesach cake (we don't use baking soda/ powder) but tastes delicious!

I haven't tried this yet (I've tried many no mixer vanilla base cakes on pesach that I did not like over the years) but it looks good. Adjust it to make it into your coffee cake.

Would it help if I made it in a tube pan? Officially if made in a tube pan it's supposed to hold up
