Anyone have a good recipe for pickled tongue? Do you soak the meat before cooking or no? How do you season it?

I rinse the meat and cook it up in water. When the water is boiling I spill the water and refill the pot. Cook the meat for about 2 1/2 hours.
Peel and let cool. Slice and rewarm in sauce.

Hmmm I don't know exactly.
Saute an onion, add brown sugar, ketchup, OJ. Something like that, I'm not really sure.
