I have tons of matzah ball mix left over from pesach. Problem is my dh likes HARD matzah balls and they come out so fluffy.
Anyone know how to make them more dense? Exact recipe/procedure preferred.

Hard matza balls
1/2c water
1/2c oil
3 eggs
Salt,pepper
Matza meal (enough to reach the right consistency, if you're not sure wait 15 mn instead adding more!)
Make balls and cook as usual.

Does the mix call for eggs?
I'm not an expert, but I think if you simply use less egg this will make it less fluffy & more dense.
May half the amount of egg it calls for?
