For middle-aged women who cover fully, what kind of tichels are people wearing? Also: are there people who never wear shaitels even to simchas? Is it considered mainstream? If so, what do they wear to simchas?

Women cover pretty much any way they want. Nobody looks twice.
If you are a member of a certain chassidus, you cover the way your rebbetzin covers. Otherwise, it's all good.
For a simcha, you wear a fancy wrapped scarf (Wrapunzel style) in a sparkly metallic fabric. Big Fashion has a store that does nothing but head coverings, and the prices and quality are excellent. I spend a lot of money in there!
