You don’t need special recipes for spelt. Unless it’s a dough thing.
I just substitute the wheat flour in the recipe for spelt. It works just fine in cakes and cookies.

if you are baking for someone who's used to real flour, they are not going to like almond flour. they might. but they might not. and it's a lot of work and cost to make these things grain free.
you're better off with fruit or something else.
we were gluten free for 2 years. 2 hard, long hungry years!

Where does fruit come in here?
I need to bake something and these are my flour/substitute options.
Sigh. I know it’s a lot of work and expensive. But what choice do I have?
(And I’m dreading the work too. Though I enjoy baking, it’s not quite fun with the current circumstances)

This is a regular recipe in which I substitute almond flour, cup for cup. Once I forgot, and made it with flour, and I didn't like it as much! Make SMALL portions, because it is rich. So quick, easy and good. Enjoy!
Chocolate Enough cupcakes, from The Fannie Farmer Baking Book (may the geula come soon!)
3/4 granulated sugar (adjust for agave - maybe half a cup?)
1/2 c. almond flour
1/4 t. salt
2 eggs
1 stick margarine (maybe reduce slightly due to agave?)
4 ounces semisweet chocolate (2/3 c. chocolate chips)
1 t. vanilla extract
Melt margarine and chocolate in a pan. Turn off the flame. Add all the other ingredients. Spoon batter into cupcake liners (use smaller ones- if you use the mini cupcakes, it makes 36). Bake for 20 minutes at 325.

regarding substituting oil for margarine, I think its 6 Tablespoons of oil for one stick of margarine.
