Please help. No time to go through all my recipes and try to figure out a menu.
What are some things people are making that are special for yom tov but very simple and health conscious.

Greek salad.
I've seen tofu cocoa honey desserts but haven't seen silken tofu in a while.
Roasted vegetables.
Gotta run but hope I started things off.

Pesto salmon
Tomato basil soup
Roasted vegetable salad with sheep feta
Strawberry applesauce
Grain free blueberry crisp
Rorie’s gluten free cheesecake
Almond milk iced coffee
Euro salad with kiwi, blueberry, mango, sliced almonds and balsamic dressing
Gluten free mocha cheese muffins (can be made with wayfare cream cheese)

Whole wheat (pasta) baked ziti, cheese, sauce.

Garlic mushroom quinoa
Boil 1 c quinoa in 2 cups water
In a frying pan saute 1 lb sliced mushrooms in 1 tbsp olive oil about 5 minutes
Add 5 cloves crushed garlic and half tsp dried thyme.
Saute for about 3 minutes.
Add cooked quinoa, mix well, add 2 tbsp parmesan.
Salt and pepper to taste.
Delicious with or without cheese

I didnt plan my menu yet. These are some of the stuff that I usually make:
roasted zucchini in tomato sauce
sauteed cabbage with pastrami (the inside of an eggroll)
broccoli cheese bake
quiche
salmon salad
eggplant parmesan
roasted vegetables
popcorn cauliflower
roasted broccoli
garlicky string beans
greek salad (joy of kosher)
Shakshuka
smoothie
zucchini broccoli soup/butternut squash soup
