We got a lot of bags of frozen mixed vegetables in the lunch pickups and my kids are getting bored of them. They are carrots, beans, peas and corn. I usually just add spices and sometimes a little butter.
Is there anything more exciting I can do with it?

Make chicken pot pie.
Or use it in pasta salad.

Make a cheese sauce. Melt some American Cheese or Shredded Cheese in a little milk.

Is there a recipe for using the veg in pasta salad? I always mean to make pasta salad and never know what to put in, and how to spice it.

I put them in baked ziti or any other kind of carb/cheese dish.
Or bake them in a pan under any chicken dish. They also work well under salmon or flounder.

1-Mix with suated onions and chicken. Add thin flat noodles
2- vegetable soup
3- mix with eggs and breadcrumbs and make vegetable patties
4- cook rice and mix in the veg
5- Vegetable omelette or frittata, With or without cheese
6- vegetable bourekas / buy puff squares, fill fold in half, egg wash, bake

My family will eat pasta salad with tuna and frozen veggies dressed with an italian oil and vinegar dressing for lunch.

Cook up 1 pound pasta. Rinse and drain.
Add 1 cup thawed small veggies and some diced Israeli pickles if you'd like.
For dressing, combine 1 cup mayonnaise, 1/2 cup water, 1 teaspoon garlic powder & 1 teaspoon salt. Cover and shake until smooth. Pour over pasta salad and toss.
For a sweet deli type pasta salad, add some scallions or red onion instead of pickles (can used colorful diced peppers instead of the thawed peas & carrots).
For dressing, combine 1 cup mayonnaise, 1/2 cup sugar, 2 Tbsp vinegar, 2 Tbsp water with a pinch of salt & pepper. Cover and shake until smooth.

Yum! I use it all the time for a veggie fried rice to go with any chicken or fish dinner. I bake it open in oven with a bit of oil and spices. Meanwhile, whip up a fried egg. Toss it all together with cooked rice.
My fam loves and it makes a balanced meal easy. Lucky u got a stock-up on that!

I make minestrone soup with it.
Fry onions,add tomatoes&/tomato sauce. Spices. You can add zuchinnis and celery if you have.
Delicious!
