I’m thinking of corned beef with a sweet glaze and having that for more than one meal. Roasted vegetables. That’s super simple. Smashed potatoes. That’s also simple. DH doesn’t like melted cheese so I’m thinking to just have cheesecake and be done with milchigs after that. We’ll eat the cheesecake as “kiddush” and then wait an hour before fleishik. Shabbos will be cholent. He’s not big into Kugel either so no side dish to go with hearty cholent. Maybe simple baked salmon as 1st course on Shabbos. It’s just the 2 of us. This is basically what I did for Pesach and it was fine. Enjoy!

My simple menu:
First night:
I ordered a family style shavous meal from a local dairy restaurant. My family voted on their menu options and landed on penne vodka with caesar salad. I am making cheese cake for dessert. I am most likely going to make salmon to go with it and plain pasta for two of my kids who wont touch the red sauce on the penne.
First day lunch:
No idea yet. It will be something like:
Challah
g. fish maybe
salad
chicken on the bone with spices
some kind of potato thing
dessert - whatever Dunkan Hines cake mix I grab from the pantry.
Shabbos dinner:
Challah
g. fish
maybe soup (chicken or veg)
brisket (bought on sale 2 weeks ago and froze! yay!). I make it super simple with just onions and onion soup mix and omg its so good.
A cooked veg, most likely green beans
maybe a kugel
Shabbos lunch:
OMG I HAVE TO COOK AGAIN? NO!

Sauté a leek (light green and white parts), 5-6 garlic cubes, a medium yellow onion. When it’s soft, add a bag of frozen artichoke hearts or bottoms I can’t remember lol. When the onions caramalize a bit more, add chicken stock to cover (I do water + any soup mix), 1/2 a bay leaf, some parsley, thyme, salt, pepper.
When it’s all cooked, purée it. And then pour through a mesh strainer because it has some unblendable pieces and I have sensory issues.
Optional: add a potato if too watery.
Optional: garnish with heavy cream

milchig sweet challah, cesar salad, salmon with mushroom sauce

cheesecake cappucino (layerd cake in glass cup)
chicken skewers with hot sauce
salad and babypotatoes (roasted with rosemary)
friday night:
tunapatties, salads, dips, challah
chicken soup
left overs from lunch
plum compote
shabbos lunch:
saldas, dips, challah
smoked salmon on grissini
gullash with potatoes
leftover compote, walnutcrumble,

First night:
Spicy salmon
Cream of chicken soup
Minute steak with pastrami orzo, two tone lukshin kugel and cherry pie
Day meal:
Milchig: spiderweb cheesecake, no bake triangle cheesecake, pudding pie, cheese kreplech, choc milk and iced coffee
Seuda: fish and straight to main: roast with sauteed veggies, two tone lukshin kugel and cherry pie
Friday night:
Reg shabbos meal plus meat leftovers from day meal
Shabbos day: reg shabbos meal
Fish, eggs and liver, chulent with kugel and cherry pie
My family doesn't eat a lot and I don't like patchkening so much so whatever I make, I make a lot of.
