Can I grate the potatoes on Thursday and keep in a container overnight and then on friday place the meat and grated potatoes together in crockpot?

You can make a potato kugel cholent, and prepare the raw kugel batter on Wednesday/Thursday. Pour into a tall jar or container (should come to the top), cover with a paper towel, and then seal. Refrigerate until Friday.
