Kid friendly vegetable recipes

I was asked to cook for a kimpeturin and her children. I myself don’t have yet, so I’d appreciate any help. What’s a good vegetable side dish that’s kid friendly?

How old are the children?

The safest thing to do is just to cut up various veggies into strips and send a dip. Almost all kids would eat that over roasted veggies.

I would just do something the kimpetarin would enjoy, the kids will eat whatever they like.

I usually recommend rice and steamed brocolli, cauliflower carrot mix because it is easy and I think even picky eaters like carrots. Or baked potato and corn.

Thank you all for your replies. I wasn’t told the age of the kid and can’t ask, because I don’t think the person that arranges it knows. Also, I forgot to mention, they said no broccoli and cauliflower. But thank you all anyways!

Keep it simple, no recipes needed.
I would think sweet carrots, mini peas, or green beans.

Don't stress, either the kids like veg or they don't.

I second the cut up veggie idea. Almost all kids like that, and most turn up their noses at cooked or roasted veg. Another idea is a simple salad like cucumber or coleslaw.

My kids are thrilled with cut up pickles and canned baby corn

For a cooked veggie the safest thing would be corn.

The 2 things I found are the most kid friendly are breadcrumbs n green beans, and cut up vegetables with a dip. I buy these sectionals, and each section gets another vegetable and the dip goes in the center.

Raw veggies, especially with something to dip them into
Not too mushy anything else like steamed green beans, broccoli, snap peas
Popcorn cauliflower
Salad
My kids seem to do fine with veggies... As long as nothing overcooked.

As a recipient, I wouldn't really care if I was sent veggies my kids didn't eat. I know the giver can't possibly meet all my kids' criteria (that I can't always keep up with Wink)

My three year old likes steamed broccoli and carrots. She also likes bell pepper slices and snap peas.

For a veggie side dish you could also make healthy muffins like zucchini. My kids like zucchini muffins, I’ll also add apples or cranberries.

My toddler also loves mushrooms with the Soyaki sauce from Trader Joe’s. If you have an instant pot, just add some soyaki sauce with mushrooms and pressure cook 5 minutes.

You can hide veggies in sauces and soups. Spaghetti sauce or other red pasta sauce is a wonderful place to hide veggies as you can even mash with a stick blender - not to mention that tomato itself is a very nutritious vegetable.

You could use the sauce over spaghetti squash as I have found most kids have fun with that. Or over cauliflower rice which you can now buy prepped in the frozen food section.

I don't think of potatoes - even sweet potatoes - as being a true veggie. A sweet potato is more of a nutritious carb - e.g. instead of a side of pasta or rice. However, you can cook carrots and puree them and then it's like mashed potatoes. Or do the same with butternut squash.

Roasted butternut squash with a little bit of maple syrup is also pretty kid friendly.
