Depends on the exact job but old thick cotton is the best for everything. Old diapers, 100% cotton t shirts, men's underwear, dishtowels and the like. woven 100% cotton shirts not so much because they're too thin to absorb much, ok for dusting but not really for things like washing floors or the fridge. 100% cotton corduroy is ok and cotton flannel is awesome. terrycloth like old towels and washcloths is also ok if it's not too thick and if lint isn't an issue.
Gotta be 100% cotton--any synthetic blend is awful. And while microfiber is touted as great, IME it's as bad as a polyester shirt--doesn't absorb anything.

I use the old undershirts and cloth diapers (prefolds) along with the Amazon Basic microfiber wipes Amelia Bedelia linked to. They work well for my kitchen wiping needs.
