Can I leave salmon out until the meal?

I like salmon fresh from the oven at room temperature, without it going in the fridge.

Can I leave it out from when I bake it before shabbos until the meal? How long can I keep it out for?

I put salmon in the fridge, then take out about 1 hour before the meal. Delicious!

I'd leave it out only if it's cooked right before shabbos.

My inlaws do that frequently and no one has gotten sick b"h.
But for me that's a total appetite killer and I don't touch it when it was out all day. It scares me.

Yes I do that. No one has ever gotten sick bh. I cook it after noon usually though
