Can someone guide me how to set up calls and text messages to be forwarded from one cell-phone number to another cell phone number temporarily (while I am on vacation)?

AFAIK it depends on your plan. Not all plans cover this feature

Calls can easily be transferred. Texts depends. Check in with your carrier.
Also, what phone will you be using? I have an app on iPad from Verizon & I get calls/texts on my basic phone & iPad. You may be able to try something like this.
